I'm so sorry I have been missing for a week now. We moved out of our little duplex house and I am now officially in the phase of being homeless until our next lease begins. Change is always very exciting, however I will be honest that I am dreading some of the aspects coming this next year. When you have a perfect room-mate you wish you could just stay with that person forever, but alas you have to move on. Also, for all of you who have moved out there: HOW MUCH DOES A MOVE OUT CLEAN SUCK?!
Yes, I know. It was a really stressful week. But to make the times easier I took a few minutes to make this dip... and it was SO GOOD.
Cookie Dough Dip
What you need:
1/2 cup butter
1/3 cup brown sugar
1 teaspoon vanilla extract
1 (8 ounce) package low fat cream cheese
1/2 cup sugar
3/4 cup semisweet milk chocolate chips
In a small pan, melt the butter with the brown sugar over medium heat. Stir continuously, until the brown sugar dissolves. Remove from heat, whisk in the vanilla and set aside to cool. Beat the cream cheese and sugar for 1 minute. Slowly beat in the cooled butter mixture and beat again for another minute. Stir in the chocolate chips and then pour into a serving bowl and refrigerate.
Best eaten with Vanilla Wafers.
