Breakfast For Dinner

Breakfast for Dinner is one of those little joys that everyone should take part in at some point or another. This past week I made these pancakes as a thank you for a friend for helping me move furniture into my new apartment. I couldn't decide between these or cinnamon roll pancakes. Ultimately the bacon pancakes won as it was deemed more manly and simple.

Start by frying up some bacon in a pan. Remember to use low heat as to not rush the process or burn yourself with popping grease. Don't cook the bacon too crispy as it gets cooked even more in the pancakes. Next whip up a batch of pancakes. You can find a fancy recipe online or you can be like me and buy the Hungry Jack mix that only requires water added in.


Once you mix up your batter, add in a few tablespoons of the leftover bacon grease. (If you were expecting this recipe to be even remotely healthy, turn away immediately)

Next heat up your pan and spray with Pam. Drop your batter in to the size of pancake you prefer. Carefully place your bacon in, tearing the strips as needed. Like so:


Flip the pancakes once they are covered in bubbles. Side note: these pancakes get dark/crispy because of the grease and bacon. Don't be disappointed if you don't end up with perfect golden cakes.


After coming off the pan, douse in butter and then serve with (or without) warm syrup.

End result: HUGE HIT.

Bacon Pancakes bring all the boys to the yard. And they're like- it's better than yours.
