Don't tell Paula (ok maybe you can tell her, I hear she is on quite the health kick) but I found a way to get a little bit of southern fried goodness for a fraction of the calories. I found this recipe on one of my favorite food blogs, Emily Bites. All of her recipes are healthy and geared toward Weight Watchers. I've tried quite a few and they have all delivered an intense amount of flavor - not a word you often see associated with "diet" but it is the perfect word to describe Emily's recipes. The only thing I realized afterward was how delicious a little Mrs. Dash would have been with it. I paired the fritters with chopped tomatoes and salt (a southern classic) and some tea. If I had a porch swing (and it wasn't a million degrees in Texas) I would have eaten it on the patio. My parents would be so proud.
