
Lately I've been entranced by eating clean and avoiding gluten. I say entranced only because I have yet to fully commit. Or even pretend to commit. I love the idea of avoiding preservatives and the benefits of a life and body without gluten, however I just love cupcakes and bread. So until then, it's a meal by meal standoff. In the spirit of being fair (and a pair of bananas I had completely forgotten about in my refrigerator) I tried this recipe for banana muffins (adding fresh pecans courtesy of my parents) and was blown away by how tasty and filling they are. Two muffins leaves me completely stuffed after breakfast. And the lack of sugar and flour did not compromise the taste in the least bit. 1 point for eating clean.





Be careful not to leave them in the oven too long. They are better under cooked than over. Also, I store mine in the refrigerator and take two out when I first wake up so they are perfectly room temperature by the time I decide to eat breakfast.

ReplyDeleteI've lately become very intrigued by clean eating. Haven't made the commitment yet because I just can't give up cookies, cakes, and cupcakes! Definitely want to try this recipe though :]
