Keep It Simple: Avocado Toast.

I'd like to post extravagant recipes + photos every week, but in reality I work incredibly long hours and have a bad weekday habit of forgetting to to eat meals. So to accommodate for the busy schedule, I need options that are simple, healthy, and delicious. If you have plenty of prep time, this is easy... but again, I'm the girl who looks up at 4pm and has only consumed ideally, prep time should be nonexistent.

If you've been on pinterest or instagram you've come across a photo of avocado toast. I don't know who thought of this, but it's absolutely THE BEST. The above is my favorite combination because I get the delicious taste while sneaking in some vegetables. So simple, but so damn good.

How-To: Toast bread. Spread half a regular sized avocado per slice of bread. Lightly drop Siracha across the avocado. Slice persian cucumbers and tomatoes and place on top. Sprinkle with salt and pepper. Try not to eat 6 more slices.

  2. I love eating toast with the Cookie & Cocoa Swirl (Cookie Butter) and sometimes topped with bananas! Yummy!

  3. Love avocado toast. There's so many different variations to try too. Try adding in some chopped, hard-boiled egg!
